Recipe: Feta, Olive, and Sun-Dried Tomato Cake

Welcome to our first recipe in the series highlighting our delicious olive-based products. Today, we are offering a savory and easy-to-make recipe: Feta, Olive, and Sun-Dried Tomato Cake. This cake is perfect for an appetizer with friends, a picnic, or even a light meal accompanied by a salad.

Ingredients

  • 250 g pitted black olives from Les Délices de l'Olivier
  • Fresh basil (a few chopped leaves)
  • 10 cl olive oil from Les Délices de l'Olivier
  • 1 packet of baking powder
  • 3 eggs
  • 200 g sun-dried tomatoes
  • 200 g feta cheese
  • 200 g flour
  • 10 cl heavy cream

Instructions

  • Preheat the oven to 180°C (350°F): Before starting the preparation of your cake, ensure that your oven is preheated for even baking.
  • Prepare the batter:
    • In a mixing bowl, beat the eggs.
    • Add the flour and baking powder. Mix well.
    • Gradually add the olive oil from Les Délices de l'Olivier and the heavy cream, mixing with a whisk until you obtain a smooth batter.
  • Incorporate the ingredients:
    • Once the batter is smooth, add the feta cheese cut into large cubes, some pitted black olives from Les Délices de l'Olivier, and the sun-dried tomatoes cut into pieces.
    • Also, add some chopped fresh basil to flavor the mixture.
  • Baking:
    • Pour the mixture into a greased and floured loaf pan.
    • Bake for about 40 minutes. To check if it is done, insert a knife blade into the center of the cake: it should come out clean.
  • Serving:
    • Let the cake cool slightly before removing from the pan.
    • Serve in slices, accompanied by a green salad or enjoy it as an appetizer.

Tips and Variations

For an even more Provençal touch, you can add Herbes de Provence to the batter. If you prefer a softer cake, replace part of the flour with cornstarch. This recipe is also delicious with green olives for a change in flavor.
