Today, I am delighted to share with you a traditional and delicious recipe from the Nice region: Pissaladière. This onion tart, delicately topped with anchovies and olives, is a real treat to enjoy with family or friends. Join me in this culinary adventure to delight your taste buds!

Ingredients for 4 people:

  • 1 shortcrust pastry
  • 1 kg white onions
  • Olive oil (preferably from our Maison Soler selection)
  • 6 anchovy fillets
  • 6 black olives
  • Salt and pepper

Preparation:

1. Prepare the onions:

Peel and finely slice the white onions. In a pan, heat a generous amount of olive oil. Add the sliced onions and blanch them over low heat until they become translucent and tender. This step can take about 20 minutes. Stir regularly to prevent them from browning too much.

2. Prepare the pastry:

Preheat your oven to 180°C (350°F). Roll out the shortcrust pastry in a tart pan, making sure to border it well.

3. Assemble the pissaladière:

Spread the blanched onions in a thick, even layer over the pastry. Lightly season with salt and pepper. The anchovies will already add some saltiness. Arrange the anchovy fillets in a crisscross pattern on the onions. Place the black olives between the anchovy crosses for a nice decoration.

4. Baking:

Bake the pissaladière in the oven at 180°C (350°F) for about 30 minutes. The pastry should be golden and crispy.

5. Serving:

Serve the pissaladière warm or at room temperature. Pair it with a good rosé wine from Provence for a perfect tasting experience.
